The festive season has not yet finished in France as the 6th of January will be Epiphany which sees the production of one of my favorite seasonal cakes, La Galette des Rois or Kings cake. This tradition dates back to the XIVth century and is representational of the gifts brought by the three kings to the nativity scene in Bethlehem. The traditional pastry contains an almond based filling which I adore but which my wife now only allows me to consume in very restricted quantities because she is in denial of the “hot wash stalker.”
